Meet the Wine maker: Chocolate & Wine Pairing event with Dilyana from Aya Estate Vineyards, Bulgaria

Join us for a special Chocolate & Wine Pairing featuring Bulgarian winemaker Dilyana Vassileva, co-founder of ENSO Wines and co-owner of Aya Estate Vineyards.
This intimate evening offers a rare opportunity to taste her wines alongside our artisanal chocolates while hearing directly from the winemaker herself about her vineyards, philosophy, and craft.
We will explore three distinctive wines:
Aya Melnik (100% Broad-leaved Melnik) — from 50–60-year-old vines in Harsovo with southern exposure. Harvested late and partially aged in old oak, it shows depth, structure, and a strong sense of terroir.
Petit Manseng — grown biodynamically near Kavarna by the Black Sea, where constant sea breezes preserve freshness. Hand-harvested in December, spontaneously fermented, and aged in oak, it offers a rich yet beautifully balanced profile.
Muscat Ottonel — organically grown in the Thracian Valley, expressing lifted aromatics and vibrant freshness.
Each wine will be thoughtfully paired with chocolate to highlight its character — creating a unique, immersive tasting experience guided by the winemaker Dilyana alongside our founder Betty Petrova.
