Atlantis 2021 from Turay Family Winery is a beautifully unconventional sparkling wine from Baj, Hungary, made from 100% Generosa. Dry, naturally cloudy, and rich with texture, it offers a completely different experience from polished, crystal-clear sparkling wines.
The nose is delicate and intriguing, with wildflowers, salinity, and minerality. On the palate, bright citrus meets layers of brioche, fresh yeast, and subtle nuttiness from the wine’s time resting on its lees. Light to medium-bodied but surprisingly textural, it finishes fresh, savory, and complex.
Atlantis is made from certified organic, Demeter biodynamic, dry-farmed grapes using a traditional approach. The base wine was produced in 2020, then bottled entirely by hand in 2021 for a second fermentation in the bottle, méthode traditionnelle style. Unlike conventional sparkling wines, the lees were intentionally left in the bottle rather than removed through disgorgement, giving Atlantis its cloudy appearance and distinctive yeasty, textured character.
Tip: Serve well chilled. Since the lees remain in the bottle, gently handle it when opening and expect some natural sediment.
