This 100% Cabernet Sauvignon from Bulgaria’s Thracian Valley offers a fresher, more savory take on the classic grape. Full-bodied and deep ruby in color, it combines dark fruit and firm tannins with herbal, earthy character and lively acidity.

The nose shows cherry, dark berries, forest floor, fresh herbs, and a subtle jalapeño note. On the palate, ripe dark fruit meets savory herbal complexity, structured tannins, and bright acidity. Aging in used French oak adds polish and texture while allowing the fruit and natural character of the wine to remain front and center.

The grapes come from practicing organic vineyards with 20–30-year-old vines. Spontaneous fermentation takes place in stainless steel for 50 days, followed by 9 months in used French oak and another four months resting in stainless steel before bottling.
