Controlled Chaos 2025 from Kolonia 52 is a playful red-and-white cuvée from Hungary’s volcanic Szent György Hill and Mount Csobánc. Made from Pinot Noir and Pinot Gris, this light-bodied wine is bright, juicy, and refreshingly unconventional.
The story starts with whole-bunch Pinot Noir soaking in freshly pressed Pinot Gris juice before the two co-ferment for seven days in fiberglass tanks. The free-run juice then spends eight months aging in barrel and amphora. Hand-harvested from volcanic vineyards and made with nothing added, it’s a beautifully natural expression of the grapes and place.
In the glass, expect wild red berries, juicy raspberry, pressed violets, and wet-stone minerality. The palate is crunchy and energetic, with tart red fruit, macerated strawberry, and a touch of rosehip. Racy acidity keeps everything fresh and lively, while the light body makes this an easy bottle to chill down and enjoy.
The name Controlled Chaos comes from the winemaker’s own chaotic period when she first created the wine—and fittingly, the blend changes from vintage to vintage.
