The hand-harvested grapes are carefully selected and immediately destemmed, with only the free-run juice used to keep the wine delicate and avoid harsh tannins. The juice is then slowly fermented in stainless steel at 16–18°C for approximately three weeks, followed by gentle filtration to preserve its fresh fruit and aromatic character.
