Disegno Petit Manseng 2021 from AYA Estate Vineyards is a beautifully balanced late-harvest white from Bulgaria’s Black Sea Coast, made from 100% Petit Manseng. Naturally sweet but never heavy, it pairs concentrated stone fruit and honeyed richness with bright acidity and an intriguing savory edge.

The wine opens with aromas of apricot confit, roasted corn, honeyed stone fruit, and subtle nuttiness. On the palate, ripe apricot, peach, and dried fruit are lifted by fresh acidity, creating a light, airy texture despite its sweetness. A gentle bitterness and savory character add complexity to the long, refreshing finish.

The grapes are biodynamically farmed and hand-harvested in early December, allowing the fruit to develop natural sugar concentration on the vine. Spontaneous fermentation takes place in stainless steel for around 56 days, naturally retaining residual sugar. A portion of the wine is aged in oak for one year before blending. No sugar is added—the sweetness comes entirely from the grapes.
