Drop By Drop 2024 is a bright and effortless expression of 100% Roditis from Karditsa, Greece. Light-bodied and refreshing, it focuses on pure citrus, crisp acidity, and delicate fruit without oak, heaviness, or funky natural-wine character.
The nose shows fresh citrus, green apple, white peach, and subtle florals. On the palate, it is clean and crisp, with a citrus-driven core, lively acidity, and a soft, rounded texture. A lightly mineral finish keeps it refreshing and food-friendly.
The grapes are certified organic and hand-harvested at low yields for added concentration. Only free-run juice is used, with no skin contact. A short cold extraction helps preserve the aromatics before spontaneous fermentation with native yeasts in stainless steel. The wine does not undergo malolactic fermentation and is aged in tank before being bottled unfined, unfiltered, and with minimal sulfites.
