The nose brings green apple, citrus peel, and white flowers. On the palate, lively acidity and fine bubbles keep things refreshing, while a gentle leesy character adds texture without weighing the wine down. The finish is dry, clean, and citrus-driven.

Made from organically farmed grapes, the wine undergoes spontaneous fermentation and is bottled before fermentation finishes using the pét-nat method. It is then hand-disgorged and bottled unfined, unfiltered, and with no added sulfites. Natural lees or crystals may be present—serve well chilled.
