Santimenti Mavrud
Santimenti Mavrud 2022 is a powerful expression of 100% Mavrud, one of Bulgaria’s distinctive indigenous red grapes. From organically farmed, dry-farmed vineyards in Parvomay, Thracian Valley, this is a full-bodied red with serious tannin, dark fruit, and an untamed, rustic edge.
Deep ruby to dark purple in color, it opens with black cherry, black pepper, and forest-floor aromas. The palate is bold and structured, with dark fruit and spice wrapped in firm, grippy tannins that coat the palate. There’s a raw, earthy quality that gives the wine plenty of personality, followed by a long, intense finish.
The grapes come from 20–23-year-old vines and undergo spontaneous fermentation in stainless steel with seven days of skin contact. The wine then spends six months on fine lees, with no oak influence to soften or mask the character of the grape. Bottled unfined, unfiltered, and with minimal added sulfites.
Bring It to the Table
This is a wine that wants something substantial alongside it:
🐑 Slow-roasted lamb shoulder with garlic and rosemary
🥩 Bulgarian-style grilled meat and kebabs
🦌 Venison stew with juniper and black pepper
🐗 Wild boar with roasted root vegetables
🍖 Braised beef short ribs
🍄 Mushroom and beef stew
🧀 Aged sheep’s milk or hard mountain cheeses
Vintage: 2022
Producer: Dimitar Kostadinov

About the Producer: Third-generation winemaker Dimitar Kostadinov transformed his family’s Zagreus estate into an organic, low-intervention winery focused on native Bulgarian varieties like Mavrud. His natural wines combine traditional techniques, native yeasts, and a willingness to experiment.
Dark, grippy, earthy, and unapologetically wild. Santimenti Mavrud is a powerful taste of Bulgaria’s ancient red-wine tradition.
