The grapes come from practicing organic vineyards planted on clay soils with 25-year-old vines. They undergo spontaneous fermentation with an extended 1½ months of skin contact, giving the wine its deep color and distinctive tannic texture. It is bottled unfined, unfiltered, and with no added sulfites, preserving its raw, natural character.
